It is always good to know how to make dough for strudel.
However, strudel dough making needs a little practice.
Strudel is a type of pastry made of a very thin dough that includes a
filling. There are numerous variations of fillings, so you can be really
creative.
For homemade strudel dough it is very important to have a high-gluten
flour (rich in starch) because strudel dough needs to be stretched to be
thin as a paper.
I remember when I was a kid when my grandma was making strudel.
She was stretching it all over the table!
It was such fun watching her do that.
However if dough making is something you would like to avoid, you can
buy already made strudel dough. A premade phyllo dough would be a good
alternative.
Here is a basic recipe for all sorts of strudels, savory or sweet, depending on a filling.
Ingredients:
Instructions:
Put the flour on a kneading board or some other flat surface.
Add vinegar, oil and salt in the water. Mix it well.
Make a pit in the middle of the flour and add the water mixture.
Knead the dough until it becomes completely smooth.
Make two balls and brush them with oil. Cover or wrap them into a plastic wrap. Leave the dough to rest for ½ an hour.
Sprinkle some flour on the tablecloth on a large table.
Roll out the dough on the board and then transfer it to the table.
How to make dough - Strudel
Grease the dough well and stretch it with your hands.
Do it with fists
not fingers, so it doesn't break and drag to the edges of the table. Cut
off the thick parts on the edges.
Sprinkle lightly with oil, then add the filling of your choice on one half of the dough.
Roll the dough together with the tablecloth, starting from the side with the filling.
Place the strudel in a greased pan, brush it with oil and bake.
How long you bake it and at what temperature depends on the filling.
But you can't go wrong if you bake at 180° C/ 350° F to 200%deg C/400° F for 30-45 minutes, or until the crust gets golden.
Here you have a recipe a little simpler than the previous one.
This dough can also be used for all sorts of pies and strudels.
Ingredients:
Instructions:
Put flour and salt in a mixing bowl. Slowly add water and mix the dough with your hands until it no longer sticks to the bowl.
Sprinkle the kneading surface with some flour and place the dough on it.
Shape it like a loaf. Cut the dough into 12 equal pieces and form small balls.
Roll out each ball into the size and shape of your baking pan.
Transfer it to aluminum foil and place it on the stove or in the stove oven for a few seconds to dry a little bit.
Fill the crusts with the filling of your choice in between them and bake.
Like in the previous recipe, how long you bake it and at what temperature depends on the filling.
But you can't go wrong if you bake at 180° C/ 350° F to 200° C/400° F for 30-45 minutes, or until the crust gets golden.
